Jinbaihe sand ginger slices are the dried product of sand ginger (Zingiber officinale). They have a unique pungent aroma similar to camphor, distinct from the flavor of ginger. They are commonly used in pickling and stewing in Cantonese and other southern Chinese cuisines, such as sand ginger chicken and salt-baked dishes, effectively removing fishy odors and enhancing flavor.
